Apple Peanut Fritters

Apple Peanut Fritters
3 cups oil
2 cups all-purpose flour
½ cup granulated sugar
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
½ cup whole milk
2 large eggs, lightly beaten
¾ cup apple cider
½ cup chunky peanut butter
½ cup vegetable or peanut oil
2 Granny Smith apples, peeled, cored and chopped into ¼” pieces
1 cup chopped peanuts
2 tablespoons unsalted butter, melted
1 tablespoon confectioner’s sugar for dusting
In a deep-fryer or electric skillet, heat the oil to 375°.
In a large bowl, stir together the flour, sugar, baking powder, salt, cinnamon and nutmeg. In another bowl, combine the milk, eggs, cider, peanut butter and oil, and stir into the dry ingredients until well-blended. Mix in the apples and chopped peanuts until they are evenly distributed. Blend melted butter into the batter.
Drop spoonfuls of the batter into the hot oil, and fry until golden on both sides, about 5 minutes. Fry in smaller batches so they are not crowded. Remove from the hot oil using a slotted spoon, and drain briefly on paper towels. Dust with powdered sugar just before serving.
