Sweet and Spicy Dipping Sauce for Shrimp and Grilled Pineapple
2 pounds very large shrimp
1 tablespoon sambal oelek chili paste
1 teaspoon kosher salt
1 teaspoon orange zest
1 tablespoon orange juice
½ cup agave or maple syrup
1 tablespoon tomato paste
2 green onions, minced
pineapple spears for grilling
Thoroughly whisk together all ingredients, except pineapple spears.
Prepare grill or indoor grill pan, heating to a medium heat. Place spears on grill and once grill marks appear, baste with the dipping sauce. Serve the sauce with shrimp also.
