Sweet Potato Pie
Celebrate fall with this traditional sweet potato pie, and bring the taste of the season to your dinner table. You may want to add this one to your "favorite recipes" file too.
Sweet Potato Pie
3 large eggs, beaten
¼ cup sugar
¼ cup brown sugar
½ teaspoon salt
¼ teaspoon nutmeg
¼ cup evaporated skim milk
1 teaspoon vanilla extract
3 cups peeled, cooked sweet potatoes, mashed
9" pie crust
Preheat oven to 350°.
In a mixing bowl, beat eggs lightly, and add sugars, salt and nutmeg. Mix together, then add milk and vanilla. Blend in sweet potatoes, and mix well. Pour mixture into the pie crust.
Bake for 1 hour or until crust is golden brown. Cool and cut into 8 slices.
