Turn fresh tomatoes into tasty bruschetta

Tomatoes are good sliced, diced, on a slice of bread or tossed in a salad. There are any number of both sweet and savory recipes using fresh summer tomatoes.

The following bruschetta recipe is a classic appetizer that can be transformed into a topping for chicken or an addition to a fresh salad. However you eat it, fresh tomatoes give it a delicious flavor to enjoy throughout the summer.

Traditional tomato bruschetta

From the Lipman Family Farms

Crusty baguette
2 cups assorted chopped tomatoes
Fresh basil, cut into thin strips
2 tablespoons olive oil
2 tablespoon balsamic vinegar
salt
pepper
grated Parmesan cheese


Cut the baguette into thin slices and place on a baking sheet to toast.

Finely chop tomatoes to resemble a salsa, and add thin strips of basil.

Toss the tomato mixture with olive oil and balsamic vinegar; season to taste.

Gently heat the mixture on the stovetop.

Spoon mixture onto each slice of bread, being sure to include the liquid.

For extra crunch, top each slice with a sprinkle of Parmesan cheese and place under the broiler for 2 minutes (or until cheese is melted).
