Thai Watermelon Salad

Thai Watermelon Salad
2½ pounds seedless watermelon, diced
2 Thai chiles, thinly sliced
2 garlic cloves, thinly sliced
2 tablespoons firmly packed light brown sugar
3 tablespoons fresh lime juice
3 tablespoons fish sauce
2 tablespoons water
¼ cup chopped cilantro
¼ cup chopped mint
Place watermelon in a large mixing bowl.
In a mini food processor, combine chiles, garlic, brown sugar, lime juice, fish sauce and water. Process, then pour over watermelon and gently toss with cilantro and mint before serving.
