Soft Ginger Cookies

This recipe was prepared by Chef Tammy Brawley on Real Virginia, Virginia Farm Bureau’s weekly television program.

 

Soft Ginger Cookies

3/4 cup shortening
1 cup sugar
¼ cup molasses
1 egg
2 cups all-purpose flour
¼ teaspoon kosher salt
1 teaspoon baking soda
1 teaspoon ground cloves
1 teaspoon ground ginger
2 tablespoons granulated sugar


Heat oven to 350°.

Combine all ingredients, except the 2 tablespoons of sugar, in a stand mixer (or use a hand mixer).

Form into balls the size of walnuts. Roll the balls into the 2 tablespoons of sugar, and place on a greased cookie sheet. Bake for 10 minutes or until the tops begin to crack.
