Richlands' Caramel Pecan Ice Cream Squares

Big thank you to our producer member, Coley Drinkwater, from Richlands Dairy and Creamery for sharing this family recipe with us!

1 cup flour
1/4 cup brown sugar
1 stick butter, softened
1/4 chopped pecans
1 jar caramel sauce (approx 16oz)
1/2 gallon Richlands Creamery chocolate ice cream, softened

Tip: If your ice cream is frozen solid, remove it from the freezer to begin thawing before you begin making the crumbles.

Preheat oven to 350°F degrees.

Mix the flour and brown sugar, then cut in the softened butter. Once combined, add chopped pecans.

Pat mixture into 9x13 baking pan and bake for 15 minutes at 350°F degrees. Cool and break into crumbles.

Line 8" square pan with half the crumbs. Drizzle 1/2 jar of caramel sauce over crumbs. Cover with chocolate ice cream. Add the last layer of crumbles to the top of the ice cream, and top with remaining caramel sauce, then freeze.
