Corn, Onion, and Tomato Salad

This recipe gets even better with fresh tomatoes off the vine and sweet corn from the cob. Give it!

2⅛ pounds canned no salt added corn
2 tomato(es), diced
1 sweet onion(s), thinly sliced
1 bunch(es) cilantro, minced
2 lime(s), juiced
⅓ cup rice vinegar
¼ teaspoon salt


In a mixing bowl, combine corn, tomatoes, sweet onion, and cilantro.

Squeeze lime juice in to the bowl and mix.

Stir in rice vinegar to taste.

Season with salt.

Cover and let chill for 45 minutes.

Stir well before serving.
