Chilled Blueberry Soup

This chilled blueberry soup is a refreshing seasonal treat on a hot summer day.

Chilled Blueberry Soup

2 cups fresh blueberries
1 cup 100% apple juice
½ cup plain, low-fat yogurt
1 teaspoon cinnamon
fresh mint leaves for garnish

Rinse blueberries, and set aside a few for garnish. Blend all ingredients in a food processor or blender.

Serve immediately. Garnish with mint leaves and blueberries if desired.
