This recipe was prepared by Chef Tammy Brawley on Real Virginia, Virginia Farm Bureau’s weekly television program.
Chicken of the Woods Scampi
2 tablespoons butter
2 tablespoons olive oil
1 garlic clove, peed and sliced
Crushed red pepper to taste
2 tablespoons dry, white wine
2 cups Chicken of the Woods mushrooms, coarsely sliced
1 package of angel hair pasta, prepared according to directions
Garnishes:
chopped parsley
fresh squeezed lemon
shredded parmesan cheese
Prepare pasta, drain and set aside, reserving some of the pasta water.
In a large saute pan, add butter and olive oil and mix together. Add garlic and cook until tender; mix in the red pepper. Add wine to the center of the pan and let simmer.
Add mushrooms to the pan and stir. Then mix in pasta and combine with the sauce. If it’s too dry, mix in pasta water.
Garnish and serve.
